  • 1/2 tablespoon olive oil
  • 1 pound ground beef (I used 'extra lean')
  • 1 teaspoon chili powder
  • 1 teaspoon chili powder (chipotle)
  • 1/2 teaspoon oregano
  • 1/2 teaspoon cumin
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 tablespoon tomato paste
  • 2 tablespoons unsalted beef stock
  • 12 ounces shredded cheese (blend -about 3 cups, or combination of cheddar, monterey jack and pizza mozzarella)
  • 6 flour tortillas (mine were about 7 - 8 inch diameter)

    Delicious! Easy to make I might modify / simplify with a pre-mixed seasoning packet for the meat. But the recipe as is was great and pretty simple

    Simple and very delicious. I replaced tomato paste with salsa and did seasoning a bit differently but the end result tastes amazing. And I still got enough leftover fried ground beef for quick tacos in coming days

    Super easy meal but as others mentioned I would recommend upping the spices to 1 tsp instead of just 1/2. Make sure to use plenty of cheese as this helps with the flavor profile. In the future I would add some fresh onions, cilantro, bell peppers, and chives. Jalapeño if you can take it.

    They were okay just definitely not as good as the picture lead them to be and I even used more seasoning like one person suggested in another review but it just still tasted like I was eating plain beef in my quesadilla.

    Very tasty! Its essentially a homemade taco seasoning. We used ground turkey instead of beef, substituted the chipotle seasoning with Cajun seasoning, and dipped them in a homemade guacamole dip. Quick and easy, great for lunch.

    Family hit for all the flavors! I had to tweak recipe a bit from what I had on hand. But it was delicious nonetheless!! I didn’t have any chipotle chili powder so I used Cajun seasoning. Also didn’t have tomato paste so used 4 tbs of tomato sauce. I used only mozzarella and cheddar cheeses. I love recipes that allow these kind of adaptations! Certainly does need an accent dipping because it is rather salty. So I chose sour cream and salsa was good too.
