This extra-cheesy green bean casserole is so good, it will convert all the vegetable skeptics around the dinner table. The recipe is a Yummly original created by Sara Mellas.

- nonstick cooking spray
- 1 lb. green beans (trimmed)
- 8 oz. cremini mushrooms
- 1/2 yellow onion (medium)
- 2 cloves garlic
- 1 Tbsp. salt (for blanching beans)
- 2 Tbsp. butter
- 1 tsp. dried thyme
- 3 Tbsp. all purpose flour
- 2/3 cup chicken broth (or vegetable broth)
- 1 1/3 cups half and half
- 1/2 tsp. salt (for sauce)
- 1/4 tsp. black pepper
- 1/4 cup shredded Gruyere cheese
- 1/4 cup shredded Parmesan cheese

Directions
- Preheat the oven to 400°F.
- Spray an 8- or 9-inch square baking dish with nonstick cooking spray. Set aside.
- Cut the green beans into 1 1/2-inch pieces. Slice the mushrooms, finely chop the onion, and mince the garlic.

Made this for Thanksgiving and it turned out soooo good! I made a triple batch and the only thing I wish I’d done differently was to let the sauce cook off a bit more. But it was delicious and everyone loved it! I’ll for sure be saving this for next Thanksgiving!
