Very tasty. This can easily become a regular on the dinner table. I used one zucchini instead of two and I think it was a good amount. Squeeze out as much water from the zucchini shredding as possible.

quinoa cooked perfectly and treat great with the garlic. then i added the zucchini cheese, salt and pepper. ugh turned into a bland mushy disappointment. i regret wasting ingredients in this dish. Don't even bother

Made as instructed and really good, was skeptical about the zuccini but it added great flavor and texture
