It wasn’t the best or worst thing I’ve ever tried. The cheese didn’t really stick to the dish and it seemed a little too watery/too much tomato juice. I also added additional seasoning (garlic powder, onion powder, Italian seasoning and a little bit of creole seasoning) to give it more flavor.

Family loved it but didn't have canned tomatoes so added more fresh and more garlic then about 1/2 cup spaghetti sauce.

It turned out really good. I believe the next time though I will take the juice off of the roasted tomatoes so it won’t be so soupy. Great taste!!

Very easy to make. I'll definitely mske this again. I thought it was better the next day, the eggplant seemed to absorb more sauce flavor

Excellent, i should have peeled the eggplant because the skin was tough. I added some italian seasoning and had to broil it when it was done for browning. I will be making it again.

It turned out amazingly good! I added a bit more parmezan and put garlic powder instead of real garlic. I recommend this meal!

I liked it! I replaced tomatoes with marinara sauce, and spinach with red peppers. Great for groups. Don't stack eggplant, top layer won't cook as well.
