I love spice & love using cauliflower in place of potatoes so this was a hit for me. So nice because you can make this in the am and placed in fridge until ready to bake. Adjust amount of chipotles to your liking - sometimes canned chipotles are super spicy, but other times they can be mild so you have to taste. I agree with Carole about using a smaller casserole dish, unless your cauliflower is super big. Leftovers heat up well - I actually ate this for breakfast for a couple days - Yum!

This was too spicy for my kids (I put quite a lot of Adobe in!) but my husband who is on a low carb diet, loved it

We lived this recipe Even my cauliflower hater liked it The Chipotles in Adobo sauce adds a nice spicy, smoky flavor.. I used it as a side dish with tamales and it was great I will definitely cook this again. The only thing that I would change/suggest is that the picture is misleading. With one medium head of cauliflower puréed, it only covered about a half inch depth in my 8x8 casserole dish. So, it didn’t look as pretty as I expected.. Next time I’ll use a smaller casserole dish or use more cauliflower!

Tasty! I used bagged frozen cauliflower rice to make it easier. Also doubled the cheese.
