- 8 flour tortillas (taco-size)
- cooking spray
- 2 cups cooked chicken (leftover, or turkey, shredded or roughly chopped)
- 10 oz. rotel
- 1 cup frozen corn
- 14.5 oz. black beans (drained and rinsed)
- 1 packet taco seasoning
- 1/4 cup water
- crema (Avocado)
- 1 avocado (ripe, peeled and pit removed.)
- 1 Tbsp. sour cream
- 1/2 lemon (around a couple Tbsp.)
- 1 pinch salt
- 1 handful cilantro (to taste)
- 1 pkg. yellow rice (prepared as per package directions, I use Goya yellow rice)
- 2 cups shredded cheddar cheese
