Didn’t have zucchini this time, but would like to try with them next time. So easy to make, my 12 year old made it for us.
Next time made with zucchini and added half bell pepper (did veggies - not mushrooms - in food processor to make easier). Stirred Parmesan in and topped with shredded leftover Swiss and cheddar. YUM!
