I’ve had this soup at a diner and I think this is a good copycat recipe. We’ve had it a couple times now and substituted hash browns and some velveeta for the potatoes and cheese with good success. Other ingredients were as listed.

Love this recipe! I also substituted diced steamed cauliflower for potatoes, and added some riced cauliflower in lieu of flour (to make it keto friendly).

My husband and I made this soup tonight for dinner and it was so very good. We will be making this again and again. We pretty much followed the recipe except that we didn't add celery. We also used less bacon, but every flavor comes through when you eat it. YUM!

Cooked bacon before hand then cooked the ground beef in the bacon fat before draining it out. Nice added flavor. Took some time to make but ended up very good! Big hit for the whole family.
