- 1 lb. hamburger (lean)
- 1 pkg. taco seasoning
- 1 can rotel (or can diced petite tomatoes)
- 2 cups beef broth
- 1 cup elbow macaroni
- 2 Tbsp. butter
- 2 Tbsp. flour
- 3/4 cup milk
- 1 cup shredded cheese
- 1/2 tsp. salt
- 1/4 tsp. pepper

Directions
- Brown and drain beef, stir in taco seasoning, rotel, broth and macaroni
- Heat to boiling, reduce heat and cover pan, simmer 12-14 min until macaroni is tender
- Melt butter in saucepan, whisk in flour and cook, whisking flour for 5 min until light brown and fragrant.
- Whisk in milk and bring to boil, whisk until smooth and thickened
- Remove from heat, stir in cheese, salt and pepper until smooth. Pour over burger mixture.
