It turned out delicious! I used twice the ricotta by accident, so I’m curious what the consistency of the filling would be with the correct proportions. I had the easiest time filling the noodles without breaking them than any time I’ve made them before. I think it’s because the noodles were smooth in texture and flat on the ends instead of ribbed and slanted. They didn’t tear as easily. Everyone liked the taste.
