- 2 lb. yellow potatoes (such as Yukon Gold, peeled and cut into even-sized chunks)
- kosher salt
- 1 Tbsp. vegetable oil
- 4 cups sliced carrots (peeled and thinly, about 6 medium carrots)
- 2 cups celery (thinly sliced, about 4 stalks)
- 2 cups onion (chopped into 1/2 inch dice, about 1 large onion)
- 3 cloves garlic (chopped)
- 1 tsp. dried thyme
- 1 tsp. dried oregano
- 2 lb. lean ground beef (85/15 mix)
- 1 cup water
- 1/4 cup all purpose flour
- 7 oz. tomato paste
- 1 dash hot sauce
- 1 tsp. browning (& seasoning sauce such as Kitchen Bouquet)
- 1 tsp. Worcestershire sauce
- freshly ground black pepper (to taste)
- kosher salt (to taste)
- 2/3 cup milk (plus more as needed)
- 8 oz. extra sharp white cheddar (block, shredded, reserve 1/2 cup of the shredded cheese to use as a topping)

I dont think i shopped for the right measurements, or else it probably would've been less chili-ish. But it was delicious either way!

Everyone loved this. Makes lots of food. Ai didn’t use cheddar cheese and it was a tiny bit bland.

This recipe is really good comfort food. Made enough for two casseroles by adding another pound of ground beef and extra potatoes.

I added 1/2 lb of italian sausage to the ground beef to spice of the meat a little. I also added added 1 lb of frozen green peas. My wife really enjoyed this meal.

YUM! A few modifications...added some diced bacon, and used beef broth instead of water. I couldn't find browning so added rosemary & dry mustard for some extra flavouring. Plus added a cup each of frozen peas and corn just before it went into the oven. So delicious

Great mea! Made it exactly as written but had to add my cup of fresh corn! Definitely use the sharp white cheddar! Hubby gave it a five star,
