- 12 oz. bacon (sliced into 1/4 inch wide matchsticks, I used center cut and cut them vertically with kitchen shears)
- 1 Tbsp. olive oil
- 2 lb. Brussels sprouts (trimmed and halved lengthwise)
- 1/2 tsp. sea salt
- 1 pinch pasta water
- 1 pinch black pepper
- 1 cup pitted Medjool dates (minced in a food processor for about 30 seconds, until only small bits remain)
- 1 1/2 cups chicken stock
- 2 Tbsp. red wine vinegar
- 12 oz. pasta
- shaved Parmesan cheese (garnish, optional)
