- 1/3 cup fried shallots
- 3 Tbsp. oil (shallot)
- 1 1/3 cups water chestnuts (finely chopped fresh, or jicama)
- 1/3 cup black trumpet mushrooms
- 2 Tbsp. chopped fresh cilantro (finely)
- 2 Tbsp. scallion (finely chopped, white and light green parts only)
- 1 Tbsp. oyster sauce
- 1 sesame seeds (tabelspoon, toasted and ground to a coarse powder)
- 1 Tbsp. shallot (finely minced)
- 1 Tbsp. fish sauce
- 2 tsp. toasted sesame oil
- 1 pinch ground black pepper
- 50 squares wonton wrappers (1-pound package)
