- 1 oz. red chiles (seeded dried, soak in water)
- 2 red chilies (fresh, seeded)
- 3 shallots (small, peeled and sliced)
- 1 tsp. oil
- 1 pinch salt
- 5 Tbsp. soy sauce
- 1 1/2 Tbsp. dark soy sauce
- 1 Tbsp. sugar
- 1/2 tsp. fish sauce
- 1/2 tsp. salt
- 2 dashes white pepper (powder)
- 12 shelled prawn (submerge in ice cold water plus 2 tablespoons sugar for 30 minutes)
- 1 lb. rice noodles (fresh flat, completely loosened and no clumps)
- 1 lb. cockles (bloody, extract the cockles by opening its shell)
- 2 chinese sausages (sliced diagonally)
- 1 bunch bean sprouts (fresh, rinsed with cold water and drained)
- 1 bunch chinese chives (removed about 1-inch of the bottom section and cut into 2-inch lengths)
- 3 cloves garlic (chopped finely)
