  • 2 cloves garlic (finely chopped)

  • 5 oz. peeled shrimp
  • 4 oz. chicken (ground dark meat)
  • 1/3 cup green onions (chopped, light and dark parts)
  • 1 1/2 tsp. fresh ginger (minced)
  • 1/8 tsp. white pepper
  • 1/4 tsp. sugar
  • 1 1/2 Tbsp. regular soy sauce (plus more as needed)
  • 1 1/2 Tbsp. water
  • 48 gyoza skins (purchased pot sticker/, or 1 batch basic dumpling dough, see Asian Dumplings, page 22)
