- 2 onions (diced, 2 cups)
- 2 jalapenos (minced, depending on the heat you like)
- 1/4 cup vegetable broth
- 3 cloves garlic (minced)
- 1 1/2 inches ginger (piece, minced, 2 Tbsp.)
- 1 1/2 tsp. ground coriander
- 1 tsp. ground cumin
- 1/4 tsp. cayenne pepper
- 1/2 tsp. turmeric
- 4 tomatoes (large, diced, 3 – 4 cups)
- 15 oz. chickpeas (cans, drained and rinsed, about 5 cups)
