- 1 bayleaf
- 1 cup raw cashews (Whole)
- 1 1/2 Tbsp. coconut oil (virgin, unrefined)
- 2 cups yellow onion (diced, about 1 large onion)
- 1 Tbsp. ginger (Grated, use a microplane)
- 2 serrano pepper (use 2 for more heat, minced **, see note)
- 2 tsp. mustard seeds
- 1 1/4 tsp. sea salt
- 2 tsp. ground cumin
- 1 tsp. ground turmeric
- 1/2 tsp. ground cardamom
- 1 Tbsp. garlic (Grated, use a microplane)
- 2 lb. cauliflower (trimmed and cut into 1" pieces, about 6 cups)
- 2 cups carrots (quartered and diced)
- 400 mL coconut milk (full fat)
- 2 Tbsp. tamari (to taste)
