- 1/2 tsp. baking powder
- 1/2 tsp. baking soda
- 2 tsp. spice (tsp chai, see recipe notes)
- 1/3 cup dutch process cocoa
- 1/2 tsp. salt
- 12 Tbsp. butter (tbsp usalted, browned and cooled to room temperature, reduced to 113g)
- 1 1/2 cups sugar (light moscovado, 330g, sub with packed light brown)
- 3/4 cup Tahini (well stirred)
- 2 large eggs
- 1 large egg yolk
- 2 vanilla bean paste (sub with vanilla extract)
- 2 cups chocolate chips (assorted, chunks and disks, this reciep uses a ratio of 1:1 semi sweet: caramelized white chocolate)
- 3 Tbsp. ground ginger (tbsp)
- 2 Tbsp. ground cinnamon (tbsp)
- 1 Tbsp. ground allspice (tbsp)
- 1 Tbsp. cardamon (tbsp ground)
- 1 1/2 tsp. ground nutmeg
- 1 1/2 tsp. ground cloves
