- 1 star anise
- 1/2 cup rice wine vinegar
- 1 cup red onion (thinly sliced, ½ small red onion)
- 1 pinch kosher salt
- 10 oz. rice noodles (thin, cooked and cooled)
- 18 lettuce leaves (Bibb, torn)
- 1 1/2 cups cabbage head (shredded, cabbage)
- 1/4 cup cilantro (torn)
- 1/2 cup dill sprigs (torn)
- 1/4 cup green onion (thinly sliced into rounds, green parts only)
- 1/3 cup red onions (pickled)
