- 2 Tbsp. Meyer lemon juice (or 1 1/2 tablespoons regular lemon juice)
- 1/2 tsp. honey
- 1/2 shallot (– skinned and finely chopped)
- 2 tsp. fresh dill (finely chopped)
- 4 Tbsp. extra-virgin olive oil
- 1/8 tsp. sea salt
- ground black pepper (freshly, to taste)
- 1/2 celeriac (medium, bulb, 6 oz, 170gr – peeled)
- 2 apples (Gala or other firm-fleshed, – unpeeled, halved and cored)
- 2 bunches watercress (hydroponic, – stalks trimmed)
- 1/4 cup pine nuts (– toasted, see cook’s note)
