There’s a good reason many call halibut “America’s Favorite Fish.” Fresh halibut meat has a firm texture and clean taste. The fish’s mild, slightly sweet flavor pairs well with an exceptionally wide variety of food – everything from mushroom panzanella with pine nut salsa to cucumbers and dill. The Pacific halibut is one of the largest flatfish – they can weigh up to 500 pounds and grow to over 8 feet long. (The Atlantic population is depleted through overfishing. Ask for Pacific chicken halibut at your local seafood department.) Native Americans have cooked with cedar and fished for halibut off the west coast of North America for hundreds of years. This recipe for Cedar Wrapped Halibut with Citrus Pesto is a modern spin on fresh flavors enjoyed for centuries.

- 1/4 cup walnuts
- 1 clove garlic
- 2 Tbsp. lemon zest
