- 2 lb. beef stew meat (boneless grass-fed, you can substitute bison, pork loin, venison, bear or moose for the beef)
- 1/2 tsp. ground black pepper
- 1/2 tsp. sea salt (unrefined)
- 2 Tbsp. coconut oil
- extra virgin olive oil
- 1 yellow onion (or jumbo white, cut into 1-inch cubes)
- 1 orange (sweet red, or yellow bell pepper, halved, seeded, and diced)
- 2 Tbsp. chili powder
- 1 1/2 tsp. cumin (dried)
- 1 1/2 tsp. dried oregano
- 1/2 tsp. ground chipotle pepper
- 4 garlic cloves (coarsely chopped)
- 4 cups tomatoes (cubed fresh red)
- 1 cup diced celery (optional)
- 1/2 cup fresh cilantro (minced, or parsley leaves for garnish, optional)
