- 2 carrots (medium, sliced)

- 1 orange bell pepper (or yellow, deseeded and quartered)

- 2 Tbsp. sugar
- 1 can coconut milk (200ml)
- 1/2 cup cilantro (chopped)
- 1/4 cup cilantro (finely chopped for garnish, optional)
