- 2 Tbsp. vegetable oil
- 1 tsp. cumin seeds
- 1 Tbsp. fresh ginger (finely grated)
- 1 Tbsp. garlic (finely grated, about 2 cloves)
- 1 jalapeño (or another green chile, finely chopped, use more or less to taste)
- 1 fresh cilantro (big handful, stems finely chopped, leaves roughly torn)
- 1/2 tsp. ground turmeric
- 1 tsp. red chili powder (mild, I used kashmiri, adjusted to taste)
- 1 1/2 tsp. ground coriander
- 1/2 tsp. Garam Masala
- 3 cups tomato puree (from a 28-ounce can)
- 2 tsp. kosher salt
- 1 cup water
- 1 1/2 cups green peas (frozen is fine)
- 1/2 tsp. amchur (dried mango powder or juice of half a lemon)
- rice (or flatbreads, to serve)
