- 1 head cauliflower (quartered and then sliced thin)
- 1 carrot (cut into matchsticks)
- spices (Taco, I use annato, habenero, granulated garlic, and ancho, but anything can work here)
- 1 cup tomatillo salsa (Black and Smokey, or a store bought chipotle salsa would do)
- 1 Orange (or two clementines)
- 1/2 cup sour cream
- 1/2 cup buttermilk
- jalepenos (Pickled)
- 1 cup chihuahua cheese (or any old quesadilla cheese will do)
- flour tortillas (smaller the better)
- oil (for roasting, not a whole lot)
- salt
- pepper

- 1/2 cup buttermilk
- 1 cup mayo
- 1/4 cup jalepenos (Pickled)
- 1 cup chihuahua cheese (or any old quesadilla cheese will do)
- 12 flour tortillas (Small, smaller the better, adjust total for size of tortillas)
- 2 Tbsp. oil (for roasting not a whole lot)
- salt
- pepper
