- 1 Tbsp. chopped ginger (finely)
- 1 serrano chili pepper (finely chopped, remove seeds if you prefer mild)
- 1 medium yellow onion (chopped)
- 4 crimini mushrooms (sliced)
- 1 1/2 cups tomatoes (diced, 1 can of diced tomatoes will work)
- 2 cups sweet potato (diced, or yukon gold potato, or winter squash)
- 2 cups cauliflower (cut into florets)
- 1 can coconut milk (~13.5-ounce can)
- 1 tsp. turmeric
- 1/2 tsp. salt
- 1/2 tsp. black pepper
- 1 tsp. lemon juice
- 1/4 cup fresh cilantro (chopped)

Easy and delicious. I used half coconut and half french onion soup/chicken broth mix. I also skipped cauliflower and three times the amount of mushrooms - blending crimini, shiitake, and oyster mushrooms.
