  • 1/4 cup chopped celery
  • 1/4 cup chopped onion
  • 2 1/2 cups chicken broth (I like to use Better than Buillon Base)
  • 3 tablespoons butter
  • 3 tablespoons all purpose flour
  • 3/4 teaspoon salt
  • 1/8 teaspoon pepper
  • 2 cups 2% milk
  • 1 cup shredded cheddar cheese
  • 1 teaspoon hot pepper sauce (optional)

    It was great. I made it by unit......1 head, 2 carrots, 1 onion, 2 celery sticks. And I used a KitchenAid stick hand blender to blend it right in the cooking pot. It was easy and good, nice with garlic bread and a salad.

    Delicious! I added an extra head of cauliflower and omitted the carrots and celery, my preference. Will definitely make again! Very simple! I used vegetable broth instead as well, tasted way better than I expected!
