    I think this preparation is delicious. Using white wine really added something extra to the flavors, I highly recommend it. I used regular (non-vegan) cream cheese and parmesan, worked fine. So don’t worry if you don’t have the exact right ingredients. I’ll be honest, it doesn’t remind me much of risotto. The flavor and texture is just too different. But as a cauliflower dish this is excellent.
