This was very good. In the past, my cauliflower mashed potatoes were watery but using the food processor made the difference and the consistency was more like mashed potatoes. I added some sour cream too.

Think we steamed them a bit to long and also didn't let them cool down and "drain" so to speak, before putting it in the food processor..so it turned out really wet and almost grits-like
If I made this recipe again would probably put less thyme, maybe more chives, and definitely don't steam too long. And as one other commenter said - to saute them to get rid of extra moisture? May try that.
Did have to put a bit of salt and pepper to make it taste better as it didn't have that much taste.
Overall not that bad, would probably be a lot better if they weren't so wet.
If you do happen to over steam them I'd just use a manual masher instead of the food processor, as that may save the texture more and not be so smooth and baby-food-like.
Made way tooooo much and may use the left over to make a cauliflower pizza crust.

This turned out awfully! I love cauliflower mashed potatoes, but this was bad. There was nothing to help make the texture creamy, and nothing to make it very flavorful! I had to add many things to it! Wouldn’t recommend, really disappointed:(

This is my new go-to recipe for mashed cauliflower. I really like it. I keep catching myself feeling guilty that I'm eating so many carbs, but I'm not! my husband loves that it tastes good but doesn't spike his blood sugar.
