- 1 cup scallions (chopped, light and green parts separated, you'll need 5-6 scallions)
- 3 garlic cloves (minced)
- 1 Tbsp. fresh ginger (finely chopped)
- 2 lb. cauliflower (or 2 pounds ready to cook' cauliflower)
- 5 Tbsp. soy sauce (use gluten-free if needed)
- 1/4 tsp. red pepper flakes
- 1 tsp. sugar
- 1 cup frozen peas and carrots
- 1 tsp. rice vinegar
- 1 tsp. sesame oil (Asian)
- 1/4 cup cashews (chopped, or peanuts, optional)

It was good; super easy and very few dishes. My kind of weeknight meal. Kids enjoyed it too, and couldn’t tell that it wasn’t rice.

Good, should have chopped the ginger pieces smaller than I did. I was surprised at the taste of the cauliflower. It really is a nice substitute and makes for a delicious yet light meal.

surprisingly good used 2 packs of cauliflower rice. dont skip the cashews they add a nice touch. very close to real rice.

Love this recipe. It is just as good fried rice. I substituted eggs for egg whites for less fat and cholesterol! ❤️

The recipe is excellent! My two year old twins devoured it. The prep is actually takes longer than published especially if you have to grate the cauliflower.

This turned out good. Added some shrimp to mine which was a nice addition. I used low sodium soy sauce so needed to add more salt to appease my palate. I'm not a huge Chinese fried rice person so those that do enjoy fried rice should enjoy this dish as an alternative

Yummy! Halved the recipe and used what was available which was fresh sugar snap peas, carrots and roasted cashews. Also used a dash of 5 spice powder while frying scallion, ginger and garlic. Topped with miso seared scallops. Next time will use just 1 tbl of soy sauce and top with shrimp.
