  • 1 head cauliflower (rinsed)
  • 5 1/2 cups firm tofu (cubed, see recipe testing note below)
  • 6 teaspoons canola oil (divided)
  • 2 egg whites (lightly beaten)
  • 1/4 teaspoon freshly ground pepper
  • 4 green onions (chopped)
  • 1/3 cup yellow onion (chopped)
  • 1 clove garlic (minced)
  • 5 1/2 cups frozen peas and carrots (thawed)
  • 2 tablespoons low sodium soy sauce (or coconut amino)

    I tried this twice. First time the Cauliflower was not well cooked. The second time, I blanched Cauliflower for few minutes ( hot and cold) before pulsing in the blender. It worked. The result was a very yummy dish.

    Came out great I substituted the peas for green beans I also left out the tofu ( never get my hubby to eat it) . It was quick, simple and very yummy went great with the teriyaki Salmon I made
