  • 1/2 cup italian blend cheese (Sargento)
  • 1 large egg (beaten)
  • 1/4 teaspoon salt
  • 1/4 teaspoon pepper
  • 1 garlic clove (minced, optional)
  • 1/2 teaspoon paprika
  • 2 leeks (small, cleaned and sliced, use only the white and bright green parts of the leek)
  • 2 cups cremini mushrooms (sliced, with stems removed)
  • 2 tablespoons butter
  • 4 eggs
  • 1/3 cup greek yogurt (sub sour cream, if desired)
  • 2/3 cup heavy cream
  • 1 cup sharp cheddar cheese (Sargento, fine cut)
  • 1/2 teaspoon salt
  • 1/2 teaspoon pepper
  • 1/4 teaspoon red pepper flakes
