    The flavors of this turned out way better than I actually expected! This also made notably good leftovers (kinda reminded me of cheesy potatoes) so it was great for meal prepping for the week.

    amazing. i liked it just the way it was. however it was a little watery at the bottom of the pan....

    Very tasty! My only complaint is that the sour cream/cheddar sauce curdled a tiny bit. Maybe from adding cold sour cream to very hot cauliflower? Wondering if it would be better to have the sour cream at room temp and to rinse the cauliflower in cold water after blanching to reduce the temperature differential? Worth testing out, because the flavors were great! Loved the bit of heat from the red pepper flakes too.
