- 1/2 lb. bacon (diced)
- 1 lb. fingerling potatoes (quartered)
- 1/2 lb. smoked ham (diced)
- 1/2 lb. smoked sausage (diced)
- 1 large yellow onion (peeled, cored, diced)
- 4 jalapeño chiles (stemmed, cored, chopped)
- 8 eggs (cracked)
- cracked pepper (to season)

Directions
- In a large cast iron skillet of medium heat, cook the bacon until lightly browned.
- Add the potatoes, ham, sausage, onions and chiles to the skillet and fry until lightly browned.
- When the potatoes are tender, crack the eggs evenly over the mixture and cook until sunny-side-up. Season with pepper and serve.
- **Another variation can be to grilling the sausage and ham prior to adding them to the dish.
