- 3 cups water

- 2 lb. chicken (cubed, you could sub 1 pound of shrimp for one pound of chicken)
- 1 lb. mixed mushrooms (I used a mix of shiitake and oyster)
- 1 onion (diced)
- 4 cloves garlic (minced)
- 1 1/2 cups white rice (short grain, paella rice)
- 15 oz. diced tomatoes
- 1 Tbsp. chili powder
- 1 tsp. smoked paprika
- 1/2 tsp. saffron threads (soaked in a bit of warm water)
- 2 cups chicken broth
- chopped parsley (garnish, optional)
- 4 garlic cloves (halved and center germ removed)
- 1/2 tsp. fine salt
- 2 large egg yolks
- 3 Tbsp. water
- 2 Tbsp. sherry wine vinegar
- 1 cup light olive oil
- black pepper (Fresh)
