- 150 grams gluten free self-raising flour
- 1 tsp. gluten free baking powder
- 1/8 tsp. salt
- 2 medium eggs
- 150 grams sugar
- 100 mL vegetable oil (I used sunflower oil)
- 25 grams pears (cut into small pieces)
- 25 grams apple (cut into small pieces)
- 1 handful peanuts (and raisins)
- cranberries
- blueberries
- cashew nuts (can use chopped or whole cashew nuts)
- 1/2 lemon (use zest of whole one lemon if its small)
- 1 Orange
- 1 tsp. dessicated coconut
- cardamom seeds (crushed)
- 1/8 tsp. cocoa powder (for each chocolate flavoured cupcake)
- 1/8 tsp. cinnamon powder (for each cinnamon flavoured cupcake Make it 1/4 teaspoon if you like cinnamon)
- 1/4 tsp. ginger powder (For the cashew and ginger cupcake.)
