- 2 chicken breasts (about 3/4lb, cut into bite-sized pieces)

- 1/2 red onion (finely chopped)
- 1 red bell pepper (sliced, I used 2 cups broccoli florets)
- 1 1/2 Tbsp. curry powder
- 3/4 tsp. sea salt (divided)
- 1 pinch cayenne pepper (optional)
- 1/2 can coconut milk (~3/4 cup light or full fat, depending on preferred thickness, I used full fat, and about 1 cup)
- 1 cup veggie (or chicken broth, I used chicken broth)
- 1/2 cup unsalted cashews (roasted)
- 1/2 lime
- lime wedges (optional)
- fresh basil (optional)
- fresh cilantro (optional)
