This is delicious. Not too time-consuming and definitely worth it. I’m so glad I have a new delicious way to make chicken.

Didn’t use water chestnuts since we don’t like the texture. Used broccoli, cauliflower & carrots. Did not salt chicken ahead since my husband is sensitive to salt and it was just fine. Made white rice..

I would reduce sugar a bit as became too sweet. Rename it Cashew Chicken Terriyaki

Absolutely sensational! I "velvetted" the chicken which I recently learnt how to do and it added so much more to the dish. I used chicken breast and sizzle steak instead of just chicken. I also added broccoli, carrot, zucchini, mushrooms, capsicum and snow peas which stretched out the dish and didnt take away from the flavour. I halved the amount of soy sauce as I was worried the full amount might be too much. I might increase the amount over time. This dish is something you make to show off to your friends and if you haven't tried "velvetting", you're missing out.

substituted green beans for broccoli, otherwise made it as the recipe calls for. definitely will make again!
