- 1 Tbsp. coconut (grapeseed, melted, or olive oil)
- 1/2 tsp. black mustard seeds (see headnote)
- 3 cups cauliflower florets (small)
- 1 bell pepper (any color, trimmed and cored, chopped)
- 1 whole hot pepper (small habañero or other medium to, seeded and minced, to taste, wear gloves)
- 2 shallots (small, trimmed, peeled, and chopped)
- 3 cloves garlic (minced)
- 1 tsp. medium curry powder (mild to)
- 1 tsp. Garam Masala
- 1/2 tsp. ginger powder
- 1 1/2 tsp. fresh ginger (grated)
- 1/2 tsp. ground cumin
- 1/2 tsp. ground coriander
- 1/2 tsp. fine sea salt (to taste)
- 1/2 tsp. ground turmeric
- juice (a quarter lime)
- 1/2 cup cashew milk (unsweetened plain, or other nut milk)
- 1 3/4 cups cooked quinoa
- chopped fresh cilantro (or parsley, to taste)
