Ingredients

  • 1 pound fingerling (or baby Dutch potatoes, cleaned and halved, or cubed, depending on their size)
  • 5 carrots (medium-sized, cleaned and chopped into roughly the same size pieces as your potatoes, so that they roast evenly)
  • 2 leeks (large, cleaned and cut into 1-1/2 inch pieces, leave the tough green parts behind)
  • 5 cloves garlic (left in the peel)
  • 1/3 cup olive oil
  • 1 teaspoon kosher salt
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon ground cumin
  • 1/4 teaspoon cayenne pepper (or more, if you like it spicier, like me)
  • 1/4 teaspoon ground black pepper
  • 1 pinch cinnamon
  • 1 pinch granulated sugar
  • 9 cups vegetable stock
  • carrots (grated, for garnish, optional)

    turned iut great! we didn't strain it as we are okay with not having it smooth. we also didnt use 8-9 cups and instesd only used abiut 5 cups. i prefer soup a bit thicker. didnt adjust the recipe at all.

    it was perfect. made it without smoked paprika and it turned out great. will make it again

    Used sweet potatoes as well! This recipe had all the right spices! I will make this again, even the husband enjoyed it!
