- lemon zest (from 1 medium sized of lemon)
- juice (from that same lemon)
- 1 tsp. vanilla extract (more if you feel daring)
- 3 cups all-purpose flour (organic)
- 2 tsp. baking powder
- 1 tsp. baking soda
- 1 tsp. cinnamon
- 1/4 tsp. ground cloves
- 1/4 tsp. nutmeg (1/2 if you really like the flavor)
- 1/4 tsp. ginger
- 2 cups carrots (grated, I used both red and yellow carrots - could have added another 1/2 cup)
- 1 cup chopped walnuts
- 2 Tbsp. olive oil
- 4 oz. cream cheese (softened)
- 3 Tbsp. goats milk (powdered organic)
- 6 Tbsp. water
- 2 cups powdered sugar
- 1/2 tsp. cream of tartar
- 1 tsp. vanilla extract
