- 1 tsp. baking soda
- 1 tsp. fine sea salt
- 1 Tbsp. canela
- 1/2 tsp. nutmeg
- 5 eggs
- 1/2 cup honey (maple syrup would work, too)
- 1/4 cup coconut oil (melted)
- 1 Tbsp. fresh ginger (grated, or 1 t dried ginger, optional)
- 2 cups grated carrots
- 1 cup parsnips (grated)
- 3/4 cup dates (chopped)
- 1 cup walnuts (roughly chopped, toasting them in the oven for a few minutes first is highly recommended, but not obligatory)
- 8 oz. cream cheese (at room temperature)
- 1 stick unsalted butter (or 8 tablespoons, at room temperature)
- 1/3 cup honey
- 1 Tbsp. lemon zest
