- 3 carrots (medium)
- 1 orange
- 1/2 tsp. red wine vinegar
- 1 Tbsp. olive oil
- salt
- ground black pepper
- 1 parsley (sprig, minced)
- 3 almonds (coarsely chopped)

Directions
- Peel the carrots and cut them into bite sized pieces
- Steam the carrots above a pot of boiling water for 10 minutes or until they become soft.
- Squeeze half of the orange onto the carrots, and toss. Add the vinegar and olive oil and a pinch of salt and black pepper.
- Serve the carrots on a plate and add the dressing. Add slices of orange and parsley to the plate for decoration.
