- 3/4 Tbsp. vanilla extract
- 8 oz. crushed pineapple (227g, well drained)
- 1 cup sweetened coconut flakes (93g)
- 2 cups all-purpose flour (260g, spooned and leveled)
- 2 tsp. baking soda
- 1 tsp. fine sea salt
- 1 1/2 tsp. ground cinnamon
- 1/4 tsp. ground nutmeg
- 1/8 tsp. ground ginger
- 1/8 tsp. ground cloves
- 2 pkg. cream cheese (8oz., 2256g EACH full-fat, at room temperature, do not melt)
- 1/2 cup unsalted butter (113g, at room temperature do not melt)
- 1 tsp. vanilla extract
- 5 cups powdered sugar (453g)
- 2 Tbsp. heavy cream (optional)
- 1 cup chopped pecans (optional)
