- 1 tsp. pure vanilla extract
- 1 tsp. cinnamon
- 1/2 tsp. nutmeg
- 2 tsp. baking powder (aluminum free)
- 3/4 tsp. baking soda
- 1/2 tsp. salt
- 1 1/2 cups carrots (grated, packed)
- 1 cup oat bran (or quick/rolled oats)
- 1 cup whole wheat flour
- 1/3 cup raisins (or chopped dates, not packed)
- 1/3 cup nuts (coarsely chopped, walnuts, I used cheaper pieces rather than whole, pecans, hazelnuts)
- cooking spray (I use Misto)

These were awesome good thing no oil and minimal sugar. I used maple syrup, half oat bran and half oats and dates.

I used dates in mine and topped with a little brown sugar for the baking. Ended up with a perfect (and deceivingly healthy) breakfast muffin. Thanks Olena!

With no honey on hand, I sub'd brown sugar (same amount), which made the muffins plenty sweet. The muffins won't rise with whole wheat flour and oats, but their density isn't a bad thing. Good healthy muffin!

Turned out yummy even though they are super healthy. I added a little cream cheese icing. Would make it again!
