  • 1 teaspoon pure vanilla extract
  • 1 teaspoon cinnamon

    I used dates in mine and topped with a little brown sugar for the baking. Ended up with a perfect (and deceivingly healthy) breakfast muffin. Thanks Olena!

    Texture they turned out great. Other then that I find them extremely bland. They are more then sweet enough just have no real taste to them other then the basic mix. Ill be altering these in the future. Ok as a base idea but nothing more. Wouldnt even consider it a carrot cake.

    With no honey on hand, I sub'd brown sugar (same amount), which made the muffins plenty sweet. The muffins won't rise with whole wheat flour and oats, but their density isn't a bad thing. Good healthy muffin!

    Turned out yummy even though they are super healthy. I added a little cream cheese icing. Would make it again!

    You have to fill the muffin cups pretty full to fit all the batter into 12,, but then they don't rise much at all, so it makes sense. I'm not a sweet tooth, but I wanted a little sugar in these; the applesauce and honey don't quite balance out the bran.
