- 1 1/2 lb. carrots (peeled and sliced into about 1/2 inch-size pieces, about 6-7 large carrots)
- 2 cups yellow onion (chopped)
- 1 tsp. kosher salt (plus more to taste)
- 1 tsp. freshly minced ginger (or more if desired)
- 2 cups bone broth (chicken, or stock, can substitute vegetable stock)
- 2 cups water
- Italian parsley (fresh, chopped for garnish, optional)
- cracked black pepper (serve with fresh, to taste)
- french bread (serve with, or croutons, optional)
- sour cream (serve with desired amount, or plain Greek yogurt, optional)

Great soup. Easy to make. Carrot flavor with a hint of ginger. Yummy on a cold winter day.
