- 3/4 cup carrot (purée, homemade or from a jar)
- 3/4 cup plain yogurt
- 1/2 cup milk
- 2 large eggs
- 1 tsp. oil
- 3 Tbsp. brown sugar
- 1 tsp. canela
- 1/4 tsp. nutmeg
- 1/4 tsp. vanilla
- 1 1/4 cups flour
- 1/4 cup quick oats
- 2 tsp. baking powder
- 1/2 cup chopped pecans
- oil (for frying pancakes, I like using coconut oil)
- 1/4 cup cream cheese (room temperature)
- 1/4 cup plain yogurt
- 1 1/2 Tbsp. maple syrup (dark, or more for sweeter syrup)
