- 8 medjool dates (pitted, about 170 grams after pitting. If they’re dry, just soak them until they’re soft and plump)
- 1/4 cup virgin coconut oil
- 1 tsp. ground cinnamon
- 1/2 tsp. ground ginger
- 1/4 tsp. ground nutmeg
- 1 tsp. baking powder
- 1 tsp. pure vanilla extract
- 2 cups gluten-free rolled oats (certified, I used Bob’s Red Mill)
- 2 medium carrots
- 1/2 cup shredded carrots
- 1/2 cup chopped pecans
- 4 Tbsp. dried cranberries
