- 1 Tbsp. vanilla bean paste (vanilla extract)
- 8 oz. cool whip (1 tub fat-free, or 2 cups cold heavy whipping cream, whipped - see note)
- 2 eggs
- 1/2 cup vegetable oil
- 4 oz. unsweetened applesauce
- 1 tsp. vanilla
- 3/4 cup brown sugar
- 1/4 cup granulated sugar
- 1/4 tsp. salt
- 1 tsp. baking powder
- 1 tsp. baking soda
- 1 tsp. canela
- 1 cup flour
- 1/2 cup chopped pecans
- 1 cup shredded carrots (from about 2 med/large carrots)
- 1 cream cheese frosting (tub Cool Whip, thawed or your favorite cream cheese frosting recipe)
