Description
A delicious moist carrot cake cupcake loaded with flavourful spices like cinnamon, nutmeg and clove. It's topped off with a not-too-sweet cream cheese frosting and garnished with walnuts and coconut.

- 2 cups all purpose flour
- 2 tsp. baking powder
- 1 tsp. baking soda
- 1/2 tsp. salt
- 1 tsp. cinnamon
- 1/2 tsp. nutmeg
- 1/2 tsp. ground clove
- baking spray
- 1/2 cup sugar
- 1/2 cup light brown sugar
- 1/2 cup coconut oil
- 2 eggs
- 1 tsp. vanilla extract
- 2 cups shredded carrot (about 2 carrots)
- 1/2 cup fresh pineapple (chopped, or canned)
- 1/2 cup walnuts (chopped)
- 1 pkg. light cream cheese (for the frosting)
- 1/2 cup unsalted butter (for the frosting)
- 1/2 tsp. vanilla extract (for the frosting)
- 2 cups icing sugar (for the frosting)
- 1/4 cup walnuts (garnish, optional)
- 1/4 cup coconut chips (garnish - or unsweetened shredded coconut, optional)

Directions
- In a bowl combine flour, baking powder, baking soda, salt, cinnamon, nutmeg, clove. Lay to one side for later use. Preheat oven to 350F. Place cupcake liners in baking sheets and spray with PAM Baking Spray. Lay to one side.
- In a stand mixer on medium, combine both sugars with coconut oil until blended, about 2-3 minutes.
- One at a time, add eggs to sugar mixture until just combined.
